Dr. Thomas Wolever is a Professor in the Department of Nutritional Sciences at the University of Toronto and a member of the Division of Endocrinology and Metabolism at St. Michael’s Hospital in Toronto. Today he discusses his book The New Glucose Revolution and his research which focuses on the glycemic index of foods and the prevention of Type 2 Diabetes. He’ll explain what it is, why it’s important, and examples of foods that are low and high in the ranking of glycemic foods.
